The difference between Australian port styles and the real Ports of Portugal are the Portugese will be lighter in palate weight and density of colour and although they have a sweet middle palate, the finish is dry.
The Calem is cellared for a number of years in big oak barrels before bottling and does not require further cellaring – it is ready to drink.
