From Yacca Paddock vineyard, a single 115 clone picked between three ripenesses and fermented in 3 ways- 100% crushed & de-stemmed for vibrancy, 50% whole bunch for structure and carbonic maceration to intensify aromatics.
Wild yeast fermented, unfiltered, minimal sulphites added with no other additions or fining agents used.
